Annual Quality Results
Grain samples from UC Small Grain Variety Testing locations are analyzed each year by the California Wheat Commission Quality Lab for milling, baking and pasta quality. Results from these tests are organized by crop type and year of testing.
2021 Preferred Wheat Varieties. Common wheat varieties assessed for bread baking qualities by the California Wheat Commission Quality Lab. Results represent the analysis of data collected from 31 locations across 5 years in California by the UC Small Grain Variety Testing Program. Varieties must have been in trials for a minimum of 2 years to be published in the ranking list. Ranking is subject to change on a yearly basis.
